Fresh Ingredients in Italian Cooking
The heart of authentic Italian cuisine starts with quality ingredients
In Italian cooking, there's a saying: βLa cucina poveraβ - the cuisine of poverty. It doesn't mean cheap food. It means making magic with simple, fresh ingredients. When you start with the best tomatoes, the finest olive oil, and the freshest herbs, you don't need elaborate preparations or heavy sauces to create something extraordinary.
At Sal De Forte's Ristorante, this philosophy has guided our kitchen for nearly 40 years. We've built relationships with trusted suppliers, learned which ingredients are worth importing from Italy, and developed an unwavering commitment to freshness. The result? Dishes that taste like they were made in an Italian grandmother's kitchen - because that's exactly the standard we hold ourselves to.
βThe best ingredients don't need to be hidden. They deserve to be celebrated. Every dish we create is designed to let quality shine through.β
Our Ingredient Standards

- Tender gnocchi
Premium Seafood
Our seafood arrives fresh, never frozen. We work with trusted suppliers to source the finest Atlantic and Mediterranean varieties for our seafood dishes.

Quality Meats
From tender veal to succulent chicken, we select only the highest quality cuts. Our meats are prepared with classic Italian techniques that let the natural flavors shine.

The Italian Philosophy
Simplicity
Italian cooking celebrates simplicity. A perfectly ripe tomato, quality olive oil, fresh basil, and good mozzarella need nothing more to create magic. We let ingredients speak for themselves.
Seasonality
Italians cook with the seasons, and so do we. Spring brings asparagus and artichokes, summer brings tomatoes and zucchini, fall brings mushrooms and squash. Our menu reflects nature's calendar.
Quality Over Quantity
A smaller portion of exceptional ingredients will always satisfy more than abundant mediocrity. We invest in premium ingredients because the difference is in every bite.
Respect for Tradition
Our recipes have been perfected over generations. We honor traditional techniques - slow-simmered sauces, hand-rolled pasta, classic preparations - because they work.
Our Sourcing Story
When the Vizzini family opened Sal De Forte's in 1985, they made a commitment: never compromise on ingredients. That commitment has only strengthened over the decades. We've developed relationships with local farmers, specialty importers, and trusted suppliers who share our values.
Our extra virgin olive oil comes from the same Italian producer we've worked with for over 30 years. Our Parmigiano-Reggiano is aged a minimum of 24 months in Parma. Our seafood arrives fresh from the coast, never sitting in a warehouse. These relationships - built on trust and shared standards - are what make our food special.
We inspect every delivery. We taste before we serve. And when something doesn't meet our standards, it doesn't go on a plate. Period. It's a simple philosophy that requires constant vigilance, but it's non-negotiable.
Why Fresh Ingredients Matter
Better Flavor
Fresh ingredients have more vibrant, complex flavors. A ripe tomato picked at peak season tastes nothing like one shipped across the country.
More Nutrition
Nutrients degrade over time. Fresh ingredients retain more vitamins, minerals, and antioxidants than their aged counterparts.
Real Food
No preservatives, no artificial flavors, no shortcuts. Just real food prepared with care and served with pride.
